Malacara B is no stranger to the specialty coffee community, and its location on the slopes of the Santa Ana volcano gives it prime growing conditions for outstanding coffee. Roberto and Rodrigo Dumont, the father and son team behind Chantuc Coffee, produce many different types of Bourbon as well as Pacas and Pacamara varieties. Bourbon is one of the older coffee cultivars still widely grown today, and is very well-regarded for its quality. It was first cultivated on the island of Reunion, near Madagascar, before being brought to the Americas. There are several types of Bourbon, Red Bourbon being the variety whose coffee cherries ripen into a deep red color. In the cup it tends to have a more balanced and classic cup profile.
